Grill for 7 minutes then rotate the drumsticks and close the lid again.
After another 7 minutes raise the grill lid and rotate again.
Internal Temp of Chicken Legs
Stick a meat thermometer into the thickest part of the Chicken Leg. You should bring the internal temperature of the chicken leg up to 175 degrees Fahrenheit. However, the U.S Department of Agriculture says you are safe with an internal temperature of 165 degrees Fahrenheit with chicken. With bone in chicken it’s wise to go even a little bit higher.
Tom Yum Sauce for Grilled Chicken
Mix the following ingredients to make the Tom Yum Sauce for Chicken.
- 4 ounces Tom Tum Paste
- 5 tablespoons cream of coconut – Brings additional sweetness too the sauce.
- 1 teaspoon ancho chili powder – Brings some mild heat too the sauce.
- 1 teaspoon dehydrated green onion
Once Chicken is up to internal temp take off the grill and place in a mixing bowl. Add the sauce to the chicken and coat.
Plate the sauced Chicken Legs and finish with chopped fresh cilantro.

- 3 Pounds of Chicken Legs
- 4 ounces Tom Yum Paste
- 5 tablespoons of Cream of Coconut
- Salt
- Fresh Chopped Cilantro
- 1 tablespoon Ancho Chili Powder
Instructions
Start with heating your gas grill up to 400 degrees Fahrenheit.
Lightly salt the chicken drumsticks and put them over direct medium heat and close the grill lid.
Grill for 7 minutes then rotate the drumsticks and close the lid again.
After another 7 minutes raise the grill lid and rotate again.
Bring the chicken legs up to an internal temp of 175 degrees Fahrenheit which should take about 25 minutes.
Take off the grill and place in a mixing bowl.
For sauce
Add 4 ounces Tom Tum Paste
5 tablespoons coconut cream
1 teaspoon ancho chili powder
1 teaspoon dehydrated green onion
Add chicken legs to sauce and coat.
Plate sauced legs and finish with chopped cilantro.
Notes
If you like more heat add additional ancho powder to taste. If you like more salt you can add a tablespoon of fish sauce to mixture.
