How to grill Chicken Breast bone in?

Fire up your gas grill to 400 degrees F. Make sure your grill grates are clean. Nobody wants dirty chicken breast. Pat the breasts dry with a paper towel. Season the breasts with salt, pepper, onion powder and dried basil.

Place the seasoned chicken breast skin up on a grill grate that is on low direct heat. The other two burners should be on medium to keep the grill at 375 degrees F while the lid is down. You don’d want to scorch the chicken so low direct heat is necessary. After 25 minutes flip the birds!

Flipping the chicken and putting it skin down will crisp up the chicken skin. Only do this for 5 minutes and flip back until you reach the proper internal temp.

According to the U.S. Department of Agriculture, the suggested internal temperature of chicken is 165 degrees Fahrenheit. Make sure you are grilling chicken breast to an internal temp of 165 degree F. Stick thermometer into the thickest part of the grilled chicken breast. Once an internal temp of grilled bone in chicken breast hits 165 degrees F take them off the grill and let them rest.

How make Basil Pesto

When the summer garden, patio planters, and farm stands are overflowing with Fresh Basil it’s time to make Basil Pesto. Basil Pesto is such a simple recipe to make its a great way to get rid of all the extra basil lying around. Start by adding a few cups of basil leaves into a blender or food processor along with a clove of garlic. Throw a pinch of salt into the blender as well. Remember you can always add more salt but you can’t take it away once it’s in the pesto. Start small and add to taste. Last step is to add 1/4 a cup of graded parmesan cheese.

Turn the blender on and slowly drizzle in extra virgin olive oil. Continue to drizzle until you get a smooth consistency. If you are noticing not all the leaves are incorporating in the pesto, turn off the blender and push them down with a wooden spoon. Put the lid back on and restart the blender to finish the pesto.

Ingredients

  • 3 10 ounce bone in chicken breasts
  • 5 cups basil leaves
  • Olive Oil
  • 1/4 cup grated parmesan cheese
  • 1 clove of garlic
  • 6 Cheese filled Ravioli
  • Mini Mozzarella Balls
  • Onion Powder
  • Salt
  • Dried Basil

Instructions

For Pesto

Add Basil, Parmesan Cheese, a pinch of salt and a clove of garlic to a blender

Turn the blender on and incorporate olive oil slowly until its a thick liquid consistency

For Chicken

Turn on your gas grill to 400 degrees F

Season the chicken breasts with salt, onion powder and basil

Place chicken breast skin side up over direct low heat

Keep other burners on medium to maintain 375 degrees F with a closed grill lid

Grill for 20 minutes

Flip the chicken to crisp up the skin for 5 minutes and flip back

Finish grilling chicken until 165 degree F internal temp

Boil pasta until tender

Plate chicken and pasta with pesto sauce and mozzarella balls

Notes

-Make sure you keep an eye on the internal temp of the chicken. If you let the thickest part of the chicken go above an internal temp of 165 degrees F you run the risk of dried out chicken.
