This is a great Indian influenced grilling recipe that combines the traditional Tandoori spices and combines them with a gas grilling style of cooking. The first step with this recipe is to season the chicken with a tandoori chicken marinade.

Take two bone in breasts and combine with tandoori seasoning, cumin, salt, coriander, garlic powder and Aleppo pepper. Rub the breasts with the seasoning and olive oil.

How to grill split chicken breast

  • First step when grilling spilt chicken breast is to make sure you have a clean grill
  • Bring the grill temp up to 450 degrees Fahrenheit
  • If you have a three burner gas grill leave one burner on low with the middle on medium low and the other on medium. That should keep your grill at 400 degrees F
  • Place the split chicken breasts on the grill grates above the low heat with the skin side up.
  • Grill for 25 minutes with the grill lid closed then flip the breasts
  • Grill for another ten with the grill lid closed and then flip back
  • Finish grilling the split breast for another ten minutes for a total of 45 minutes

You should grill split chicken breast up to 165 degrees Fahrenheit. Place a meat thermometer into the thickest part of the breast. Once it reads 165 degrees Fahrenheit take the chicken off the grill. The internal temperature of the split chicken breast will continue to rise for a few minutes after it is taken off the grill.

According to the U.S. Department of Agriculture, you should bring the internal temperature of chicken breast up to 165 degrees Fahrenheit.

Tips for a successful Tandoori Chicken Recipe

  • Don’t put the chicken breast on direct high heat. You will burn the chicken breast
  • Have a clean grill before you put the chicken on the grill grates
  • Only put the Chicken skin side down for a few minutes. Too long will burn but for a short period the grill grates will crisp up the skin and give some nice Sear Marks

Ingredients

  • 2 Bone In Split Chicken Breasts
  • 3 tablespoons tandoori seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 tablespoon Aleppo pepper
  • 3 tablespoons olive oil

Instructions

Combine all ingredients in a mixing bowl and let sit for a 1/2 hour in the refrigerator.

Bring your gas grill up to 450 degrees F
