Let’s get creative. That’s why you are reading this post. You don’t want to read another “worlds greatest steak marinade” and has the usual balsamic vinegar and garlic or soy sauce with Worcestershire sauce marinades.

Coca Cola – This will add a subtle sweetness to the meat, give it some nice Sear Marks, but not overwhelm the beef flavor.

Soy Sauce – Soy Sauce will help tenderize your beef. It will also help give your beef a more savory flavor. You don’t want to use too much soy sauce or any additional salt. Too much soy sauce or marinating beef for too long will pull out the moisture from your protein

Ginger Oil – Ginger acts as a natural meat tenderizer. It will help break down the proteins connective tissues. Again, marinate a steak for too long you could get a mushy mess. Ginger also brings some spiciness to the marinade.

Triple Sec – An orange flavored liquor. Brings a little bit of sweetness and orange flavor to the marinade. A subtle orange flavor does wonders in grilled beef recipes.

Fresh Thyme – Fresh Thyme brings some subtle lemon and earthy flavors which really enhances a beef steak.

Star Anise Powder – This spice brings additional sweetness to the marinade. If you smell star anise powder the first thing you most likely say it it smells like licorice.

How to cook top sirloin steaks

The best way to cook top sirloin steaks is grilling them. If you marinade the top sirloin steak correctly, grilling them at high heat will result in a tender flavorful steak with awesome Sear marks. Low and slow is not the way to prepare a marinated top sirloin.

  • Make sure your grill grates are clean. No one wants messy grill grate goo on their steaks!
  • Bring your gas grill up to 550 degrees F
  • Place room temperature steaks that have been patted down to remove the extra moisture onto the grill grates
  • Make sure the top sirloin steaks are over direct heat of the grill
  • Grill for 3 minutes then rotate and grill another 3 minutes
  • Flip the steaks
  • Grill for an additional 5 minutes until the steaks hit an internal temp of 130 degrees F
  • Let rest before serving and enjoy a medium rare sirloin beef steak

  • Easy on the salt. Too much salt will pull out all the liquid from the steak and give you a dry cut of beef
  • Easy on the acidity. Vinegars and Citrus Juices are great in marinades but in small quantities.
  • Depend on the size and cut of beef you will need to marinade for a long enough period.
  • Watch how much sugar you use. I’m talking honey, brown sugar, syrups. Too much on a big piece of meat will ultimately equal burnt charred beef with just burnt charred flavor.

Can you reuse a marinade?

Absolutely not! Might be looking at some food poisoning. Use a marinade once and only as a marinade then discard.

Tips for grilling a Top Sirloin beef steak

Grilling a marinated steak is different then a steak with a dry rub or slightly seasoned. Follow these tips for a juicy steak with grill marks!

  • Before you put the steak on the grill, pat it dry. Throwing a steak covered in marinade won;t grill properly. You will steam the beef while grilling. No good and no Sear Marks!
  • High Heat works best for this cut of beef. Don’t walk away from your grill though. The marinade does have sugar so you need to watch flair ups.
  • After you put the steak on the grill season it with salt. The marinade had very little salt so you need to salt the beef after its on the grill

Top Sirloin Beef Steak Marinade

This Top Sirloin Beef Steak Marinade is the only beef marinade you'll ever need when looking for compliments from your guests. It brings a subtle sweetness and enhances the sirloin flavor while tenderizing the top sirloin!

Ingredients

  • 2 10 ounce top sirloin steaks
  • For marinade
  • 12 ounces Coca Cola
  • 4 tablespoons soy sauce
  • 2 tablespoons ginger oil
  • 5 tablespoons triple sec
  • Fresh Thyme Sprigs
  • 1 teaspoon star anise powder
  • Salt

Instructions

Place steaks and all ingredients except salt in a plastic zip lock bag or container to marinade

Leave steaks to marinade for 12 hours

Pat steaks dry and bring up to room temp

Heat gas grill to 550 degrees F

Place steaks down on grill grates over direct medium high heat

Close grill lid

Grill for 3 minutes then open lid and rotate steaks 15 degrees

Grill for 3 minutes with lid down. Open lid then flip

Grill for an additional 5 minutes and bring the steaks up to 130 degrees F

Remove steaks and let sit for 5 minutes before slicing

Notes

Salt the steak after they go on the grill. The marinade has very little salt so moisture isn't pulled out of the meat while marinating. Salt is needed for this recipe though. Add it while the beef is grilling.
