What’s Pollo Asado?

Translated Pollo Asado means Roasted Chicken in English. It is a traditional Mexican dish that has some heat although it’s overpowering spice. For this recipe, I’m putting the chicken on the grill and roasting the chicken skewers on the grill.

What is in Pollo Asado seasoning?

Usually Pollo Asado seasoning is a mixture of garlic powder, chilies, cumin, paprika, black pepper, coriander, and salt. In this recipe I also use some brown sugar, clove, and dried lime zest instead of using lime juice.  The spices are then mixed with oil to coat the chicken.

For this recipe I also have a side of pepper and tomato medley. It compliments the chicken skewers nicely! Cut two plum tomatoes, one medium Spanish onion, two frying peppers, and 4 small sweet bananas vinegar peppers. Chop and combine all the ingredients with a pinch of salt, 1/4 cup of olive oil, and chopped cilantro.

Place the chicken away from direct heat and grill for 15 minutes with the grill cover lowered. You don’t want to grill the entire time over direct heat because of the sugar on the chicken. It will become a burnt mess. Finish on direct heat for the last 5 to 7 to give it a little char though. You want to bring the chicken thighs up to 170 degrees F before you take off the grill.

If you use wooden skewers remember to soak in water for at least 15 minutes before you skewer the chicken to help prevent burning.
