Summer brings fresh vegetables that need very little to prepare but are delicious nonetheless. Grilled Cousa Squash is a perfect example of less is more. Fire up the grill and enjoy this not so familiar squash.
What is Cousa Squash?
Cousa Squash is very common in Lebanese cuisine. They are often stuffed but for this recipe the small Cousa Squash are sliced and put on the grill. What you’ll notice about these terrific vegetables is they have subtle sweetness compared to green zucchini. They are very tender and have a tender skin. Perfect for the grill and some sear marks!
How do you grill Cousa Squash?
Cousa Squash are very simple to prepare. When you have a vegetable that is at their peak in freshness all you need is a little olive oil and kosher salt. However, don’t be afraid to experiment with a variety of spices before you throw squash on the grill.
For this recipe, slice the squash down the middle and cut off the ends.
Next, drizzle with olive oil and salt.
Fire up your gas grill to 400 degrees. Make sure the grill grates are nice and clean. With a good pair of tongs, place the squash face down and grill with the grill lid down for 3 minutes then flip. Grill over direct heat for another three minutes.
As always with vegetables do not over grill them! Some grill marks on squash is great for flavor but no one wants a mushy mess. Once off the grill let the squash cool. You can serve as the sliced large pieces or cut the Cousa squash into bit sized cubes. Leave the skin on, remember Cousa Squash has very tender delicate skin that is easy to eat.

Grilled Cousa Squash
Grilled Squash is fork tender grilled vegetable that has a subtle sweetness that works so well with the grill marks, olive oil, and kosher salt
Ingredients
- 4 small Cousa Squash
- olive oil
- kosher or sea salt
Instructions
Cut off the ends of the Cousa Squash off and slice down the middle
Drizzle with oilive oil and a pinch of kosher salt
Heat the gas grill up to 350 degrees
Place the squash face down on the grill grates over direct heat
Lower grill lid
Grill for 3 minutes and then turn.

Flip the squash and grill for another 6 minutes
Take squash off the grill
Notes
You want the squash to have grill marks but not have a charred surface.
