Tomatillos are not spicy. After they are grilled, they have a subtle mild taste and are often used as a base of sauces and salsas. For this recipe, you can also grill a serrano pepper to add a little bit of heat. Go ahead and throw in two if you like a little more heat.

How do you grill tomatillos?

The first thing you will notice about tomatillos is the outer husk. Go ahead and remove the husk from the fruit. You will then notice a slightly sticky residue over parts of the tomatillo. Fun nature fact about that. The sticky residue is a form of natural protection against bugs. Give the tomatillos a quick wash and they’ll be fine to eat.

Fire up your gas grill to 350 degrees. Give the tomatillos some nice sear marks but pull them off the grill before they are completely burnt. At 350 degrees its ok to put them over direct heat and close the the grill lid which will help roast. Once they start to soften take off the grill and let them cool. Flip them over after 5 minutes and then let them grill for another 5 minutes.

Besides the tomatillos, throw two ears of corn, the serrano pepper, and two green peppers on the grill as well. Once the tomatillos, serrano pepper, and green onions are soft and have light sear marks take them off the grill to cool. They shouldn’t be a mushy mess, but should be soft.

The corn should also be ready to take off with some nice grill marks.

How do you make salsa verde?

Take the cooled tomatillos, serrano pepper and the white ends of the green onions without the roots and put them into a blender. Add the juice of two limes, a nice handful of cilantro, a pinch of salt and then blend until it’s in a liquid form.

Ingredients

  • 7 tomatillo peppers
  • 1 serrano pepper
  • 2 limes
  • 1 handful cilantro
  • 2 scallions
  • 1 shallot
  • 2 ears of corn

Instructions

Bring the grill up to 350 degrees

Grill tomatillo peppers, serrano pepper, green onion and corn

Put tomatillo peppers over low direct heat and corn and serrano pepper over medium heat.

Give each a lite char on each side

Take off the heat after 15 minutes

Let cool

Place in blender and add a pinch of salt, cilantro, and juice of two limes

Blend until smooth

Slice corn kernels off corn cob

Add corn and shallots to salsa verde
