Combine lamb, ginger, the juice of one lime, garlic paste, 3 tablespoons of olive oil, and let it marinade in the refrigerator for at least three hours. I prefer to make my own garlic paste out of olive oil and a pinch of salt.
The lamb and soft tacos will only need a few minutes on the grill. The lamb is sliced thin, so it’s a quick cook time and the tacos only need a minute on the grill. Don’t put the tacos on the direct heat. You are looking for a little char, but you don’t want to burn them.
Garnish the tacos with chopped cilantro and sliced raw yellow onion. Throw some sweety drop peppers on the taco as well. Sweety drops are a small red tear shapped peppers from Peru. They are a mild tasting pepper that has an almost sweet flavor. They also add a little crunch to the tacos.
