First start with a clean grill. Fire it up to 400 degrees F. Not blazing hot just hot. Place the asparagus stems which had the ends removed directly over the heat. How do you not overcook Asparagus?

Grill for two minutes and then rotate the asparagus. You should see some light Sear Marks. Grill for another two minutes then take off the grill. If you have extremely thin Asparagus, limit the grill time to two minutes total. Extremely thick Asparagus should have an increase in grill time to 5 minutes.

Ingredients

  • 1 bunch of Asparagus (should be about 20 per bunch)
  • 12 ounce bag of Peas
  • 2 medium sized avocados
  • salt
  • pepper
  • olive oil
  • 2 lemons
  • garlic powder
  • teaspoon mustard

Instructions

Bring your clean grill up to 400 degrees F

Break the last 1 1/2 inches off the back of the Asparagus

Drizzle Asparagus with olive oil and sprinkle a little salt over Asparagus

Place Asparagus on grill grates over direct heat

Grill for two minutes then rotate and grill for another two minutes on medium heat.

Take off and let cool

Boil Peas and let cool

Cut Avocado into 1 inch cubes

Cut Asparagus into 2 inch pieces

For Lemon Vinaigrette

Juice two lemons into a mixing bowl

Remove any seed if they fell into the bowl

Add Teaspoon of Mustard

Add pinch of salt and pepper

Incorporate and whisk 1/3 cup of olive oil into the mixing bowl.

Add Vinaigrette too other ingredients and lightly mix.

Plate and sprinkle with salt to taste.

Notes

Serve cool. Don't over grill Asparagus. Use a good quality olive oil.
