How to grill bone in strip steaks.
- Start with clean grill grates. No one wants dirty steaks.
- Bring your gas grill to 500 degrees Fahrenheit.
- Salt your room temperature steaks on both sides with Kosher Salt.
- Once the grill is hot and clean, place the steaks on the grill grates.
- Grill for 3 minutes then rotate 15 degrees and close the grill lid.
- After 3 minutes open the lid and flip the steaks.
- Grill for another 5 minutes and then remove from the grill at an internal temperature of 140 degrees Fahrenheit.
- Let the steaks sit for a few minutes before serving. The internal temp will continue to rise while resting.

How to prepare melted garlic butter?
- Place a medium size cast iron skillet on the grill grates.
- Once warm place 2 cloves of garlic butter and two teaspoons of olive oil in the skillet.
- After 2 minutes of cooking add the dried rosemary and cook for another 2 minutes.
- Add a 1/2 stick of salted butter and turn off the heat of the grill. You don’t want to butter to burn.
- Let the butter reduce for two minutes and take the garlic butter off the grill.
Tips for success when grilling garlic butter steaks.
- Have a clean grill. Dirty grill ruins any grilling recipe.
- Do not heat your cast iron skillet too much. The olive oil will help the butter from burning, however you don’t want a blazing pan when you put in the butter. Burnt butter will ruin your recipe.
Once the steaks are plated it’s time for the butter. Make sure you don’t pick up the skillet with your bare hands! With a grilling mitt, pick up the skillet and drizzle the garlic butter over the steaks.

Notes
A variety of steaks can be used for this recipe if you don't like strip steaks. Filet and Ribeye may be a little too fatty to add butter to the steak. When in season fresh rosemary can be subsituted for dried rosemary.
