A variety of cuts of beef go well with mushrooms. For this recipe Skirt steak is used because its outstanding with the fungus. Skirt Steak when grilled properly is a tender cut with beefy taste. It’s flavor is complimented perfectly with the woodsy earthy flavors of mushrooms.

How do you grill skirt steak?

First step is make sure have clean grill grates. Then fire up your gas grill to 550 degrees F. Get the grill grates really scorching. Place the skirt steak that has been seasoned with salt and pepper over direct heat. Grill for two minutes then rotate 30 degrees and grill for another two minutes.

Flip the steak with a pair of tongs and close the lid. Grill for another 4 minutes. You’re only bringing the steak up to an internal temp of 130 degrees F, so the grilling process is quick. Don’t walk away from your grill and get distracted!

With a meat thermometer check the internal temp of the steak. Once the steak hits 130 degrees F take it off to rest. Keep in mind the U.S. Department of Agriculture recommends an internal temperature of 145 degrees Fahrenheit, but the internal temp will continue to rise after you take the steak off the grill and let it rest.

Why do Mushrooms taste great with steak?

The woodsy earthy flavors go well with beef. The mushrooms don’t overpower the flavors of beef they enhance them. Plus with the addition of some salt and fresh thyme the mushrooms and beef are perfect together.

For this recipe, try sliced white mushrooms and shiitake caps. Make sure the mushrooms are cleaned and without any dirt. Slice the white button mushrooms thick. I like about a 1/2 inch. As they cook they will lose water and start to shrink. Nothing worse than tiny mushrooms you can’t even taste.

Take the stems off the shiitakes and discard. Shiitakes are nice and meaty in the middle of the mushroom. They hold up well when sautéing.

How to Sauté Mushrooms?

Heat your pan up and add a 1/8 cup of olive oil. Once the pan is warm but not scorching place a sliced garlic clove into the pan. Sauté the garlic slices for a minute then stir in the mushrooms and salt. Once stirred for a minute add in the chicken stock and thyme.  Saute for a few minutes and then turn off the heat and let them sit.

Now that the skirt steak is off the grill let it cool. Once cooled slice the skirt steak against the grain. This will ensure short muscle fibers. Why is this important? The short muscle fibers guarantee tender steak. Long muscle fibers make a steak tough.

Plate the steak and mushrooms. Finish the plate off with some fresh chopped parsley.

Tips for a outstanding steak with sautéed mushrooms recipe!
  • Don’t overcook the skirt steak. Medium to Medium Rare is the perfect temp for this cut of beef.
  • Don’t overcook the mushrooms. Nothing worse than mushrooms losing all their liquid and they become tiny.
  • Don’t burn the garlic slices. Only saute on medium heat and oil for a short period of time.
  • Wait to slice the skirt steak. If cut too soon all the juice will be released.
  • Slice the skirt steak against the grain.

Ingredients

  • 1 1.25 pound skirt steak
  • 8 medium white mushrooms
  • 8 shitake mushrooms
  • fresh thyme
  • salt
  • pepper
  • olive oil
  • fresh garlic clove
  • Fresh flat leaf parsley

Instructions

For mushrooms

Slice white button mushrooms and remove stem from shitake mushrooms

Saute oil and sliced garlic clove for two min

Add mushrooms, salt and thyme to pan and stir

Add chicken stock and stir for 3 minutes then take off heat and keep lid on

For skirt steak

Heat grill to 550 degrees F

Season beef with salt and pepper

Put steak on the grill over direct heat and grill for two minutes

Rotate steak and grill for another two minutes

Flip steak and lower grill lid

Grill for another 4 minutes or until you reach 130 degrees F

Remove from grill and let sit for 10 minutes

Slice steak and plate with mushrooms

Notes

Thick slice the button mushrooms. Don't overcook mushrooms because they will shrink too much as water is released Let steak sit before you slice Make sure you have a clean grill before putting the steak on
