What is a great marinade for Carne Asada?
The ultimate marinade for grilled short ribs is the combination of tequila and orange juice. Those flavors soak into the marbled beef then are enhanced when the sugars of the marinade help create grill marks when grilling. The marinade is not complete though without the flavors of garlic and rosemary.
How do you grill short ribs with the Tequila Citrus Carne Asada Marinade?
The best cut of beef shorts ribs for the grill is the flanken cut. Because its a very thin cut of beef, it only needs a few minutes on the grill. This is not a low and slow process. High fat content and high heat is all that is needed for this delicious flavor beef explosion to grill.
Bring your gas grill up to 500 degrees. Your grill should be smoking hot. I prefer a gas grill over charcoal or wood because of the even distribution of heat. Uneven grill temps will ruin this recipe.
Place the marinated Carne Asada on the grill for one minute and then flip. Grill for another one minute and then with a good pair of tongs take off the heat. That’s it! So simple and quick. A few minutes on the grill is all it takes to grill these thin pieces of beef and get some tasty grill marks.
Don’t confuse the simple grilling method for lack of flavor. This marinade is fantastic. The orange, tequila, and rosemary has soaked into the meat fibers and compliment the beef flavor perfectly.
Tips for Tequila Citrus Carne Asada Marinade for grilled short ribs.
- Start with a clean grill. No one wants dirty beef short ribs.
- Pat the short ribs dry before going on the grill. Wet short ribs equals no grill marks.
- Make sure the grill is above 400 degrees Fahrenheit before you put the ribs on. Cold grills don’t promote grill marks.
