How to grill skirt steak.

First, start with a clean grill. Turn the gas grill up to medium high and bring the grill temp up to 500 degrees Fahrenheit.

Brush some of the marinade off the skirt steak before placing it on the gas grill. You don’t want to take all of the marinade off the meat because the marinade is where the flavor comes from. However, too much marinade will prevent nice Sear Marks on the beef due to the liquid will steam.

Place the steak over direct heat and close the lid. After three minutes open the lid and with a pair of tongs rotate the beef 30 degrees and grill for another 3 minutes. Then with the tongs flip the steak and grill for another 3 minutes. Bring up the skirt steak up to medium temp. Look for an internal temp of 135 degrees Fahrenheit.

After you’ve confirmed the internal temp with a meat thermometer, remove from the grill and let the skirt steak sit for 5 minutes. The temp will rise a few more degrees to about 140 degrees Fahrenheit while it sits. Once the juices relax after the beef sits, slice the steak against the grain for the best result. Ingredients

  • 1 Skirt Steak
  • 1 can peach nectar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 cup of Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon paprika
  • 1 tablespoon ancho chili powder
  • 1 teaspoon Annatto seeds

Instructions

Place all ingredients in a zip lock bag for at least one hour up to 12 hours.

Preheat your grill to 500 degrees F.

Take the skirt steak out of the marinade and wife off excess liquid.

Place steak over medium high direct heat.

Grill for three minutes and rotate 30 degrees,

Grill for another three minutes then flip the steak.

Grill for a few more minutes until the beef hits an internal temp of 135 degrees F.

Remove from the grill and let sit for 5 minutes.

Slice the beef against the grain and serve.
