It’s mid July and it’s hot and humid. The last thing you want to do is cook inside. Take advantage of the summer’s peak flavors for this refreshing and light marinade. Fire up the grill and make this super easy summer chicken recipe.
Have you ever bought a whole Watermelon and then realize you just don’t feel like eating a whole Watermelon? Have you ever looked in your garden and suddenly realized that the Mint is taking over? This recipe is the solution for both of those problems.
Summer Chicken Marinade
When it’s hot no one feels like cooking a complex meal in the kitchen. Try this super easy chicken recipe that just needs a grill and this chicken marinade.
- Combine 5 cups of watermelon with 2 sprigs of mint and a pinch of salt.
- Combine in a blender and puree for one minute.
- Combine the marinade with cubed chicken thighs and let rest in the refrigerator for 24 hours.
- After 24 hours, take out of the refrigerator and put the cubed chicken thighs on skewers.
Place the cubed chicken thighs on direct heat charcoal. Keep an eye on the chicken to make sure it doesn’t burn. The marinade does have some natural sugars from the watermelon.
Occasionally rotate the chicken skewers and bring the chicken up to 165 degrees F.
Once the internal temp comes up to 165 degrees Fahrenheit, take the chicken off the grill and let sit for 5 minutes before serving. According to the U.S. Department of Agriculture you should bring the chicken up to an internal temperature of 165 degrees Fahrenheit.

Mint Watermelon Chicken
Marinated chicken thighs using the summer flavors of mint and watermelon.
Ingredients
- 2 pounds chicken thighs
- 4 cups watermelon
- 2 tablespoons rice wine vinegar
- 4 sprigs of mint
- pinch of black pepper
- pinch of salt
Instructions
Combine mint, watermelon, vinegar, and black pepper
Puree ingredients
Cube chicken thighs
Combine chicken thighs and puree
Cover thighs and puree and refrigerate overnight
Put on skewers and grill
Pinch of salt on the thighs after grilling
Notes
If time doesn't permit marinating the chicken overnight that's ok.
