What’s Pollo Asado?

Translated Pollo Asado means Roasted Chicken in English. It is a traditional Mexican dish that has some heat although it’s overpowering spice. For this recipe, I’m putting the chicken on the grill and roasting the chicken skewers on the grill.

What is in Pollo Asado seasoning?

Usually Pollo Asado seasoning is a mixture of garlic powder, chilies, cumin, paprika, black pepper, coriander, and salt. In this recipe I also use some brown sugar, clove, and dried lime zest instead of using lime juice.  The spices are then mixed with oil to coat the chicken.

For this recipe I also have a side of pepper and tomato medley. It compliments the chicken skewers nicely! Cut two plum tomatoes, one medium Spanish onion, two frying peppers, and 4 small sweet bananas vinegar peppers. Chop and combine all the ingredients with a pinch of salt, 1/4 cup of olive oil, and chopped cilantro.

Place the chicken away from direct heat and grill for 15 minutes with the grill cover lowered. With a pair of grill tongs, rotate the chicken every 5 minutes. You don’t want to grill the entire time over direct heat because of the sugar on the seasoning blend. It will become a burnt mess. Finish on direct heat for the last 5 to 7 to give it a little char though.

With a meat thermometer you want to check the internal temp of the chicken. You want to bring the chicken thighs up to 170 degrees F before you take off the grill. According to the U.S. Department of Agriculture, chicken is safe to consume at 165 degrees Fahrenheit however I like to grill chicken thighs to a slightly higher internal temp.

If you use wooden skewers remember to soak in water for at least 15 minutes before you skewer the chicken to help prevent burning.

Chicken Thighs are skewered and seasoned with pollo asado seasonings then grilled.

Ingredients

  • 2 pounds of chicken thighs
  • 1 tablespoon garlic
  • 1 tablespoon chile powder
  • 1 tablespoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon brown sugar
  • 1 teaspoon fresh cracked pepper
  • 1 teaspoon dried lime extract
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground clove
  • For pepper medley
  • 2 plum tomatoes
  • 2 frying peppers
  • 1 medium Spanish onion
  • 4 small sweet vinegar banana peppers
  • 1/4 cup olive oil
  • Pinch of Salt
  • 1/2 cup chopped cilantro

Instructions

Cut 2 pounds of chicken thighs into thin strips or chunks

Place chicken in bowl or plastic bag and season

Keep in the refrigerator for at least 4 hours

Skewer the chicken thighs

Turn the grill on to 450 degrees F

Place the chicken away from the direct heat for 15 minutes on covered grill

Finish the chicken over direct heat for 5 to 7 minutes until reaching internal temp of 170 degrees F

For Pepper Medley

Chop peppers, onion, and tomato

Combine with oil, salt, and chopped cilantro
