Absolutely, make your own topping for the beef steak. It will turn out so much better and you will feel so much more satisfied you took the extra step to make a great compliment to your steak. The first thing to do is select a quality blue cheese. For me, the more pungent the better. You will only need a small amount so don’t get scared at the price per pound. Combine the blue cheese with a good quality yogurt, sour cream, and fresh cracked pepper. Super easy for such a unique taste!
Once the blue cheese topping is complete it’s time to get the steaks on the grill. Get your grill searing hot. I take mine up to 550 degrees F. While your grill is heating up, put fresh cracked pepper and kosher salt on both sides of the beef which are the only seasonings you will need. The blue cheese is the star of the show.
What temperature should you cook your steak?
Clearly people have a different opinions on this topic. For me, when cooking strip steaks I like to grill my steak to a medium temperature. I’ll bring the steak up to 140 degrees F and then take the beef off the grill and let it sit for a few minutes. It will continue to rise in temp up to 145 degrees which is perfect for this recipe.
How long does it take to grill a steak to medium?
Place the steaks on the grill over direct heat. Grill the steak for 3 minutes and then rotate the steak 45 degrees and then grill for another 3 minutes. Flip the steak and grill for 3 minutes and then rotate again and grill for another 3 minutes. Take the steak off the grill once the internal temperature hits 140 degrees F.
After you flip the steaks, it’s time for the blue cheese. I like to put two healthy tablespoons on the beef. Put the cheese on the steaks three minutes before you take them off the grill because you don’t want the cheese to be too melted. Just warm enough that it’s easy to smear all over the steak.

Ingredients
- 3 one pound strip steaks
- 1/3 pound blue cheese
- 1 tablespoon fresh yogurt
- 1 tablespoon sour cream
- salt
- pepper
Instructions
For the blue cheese.....
Combine the blue cheese, yogurt, sour cream, and pepper
Place in the refrigerator until the steaks are almost finished cooked.
Salt and pepper both sides of the steaks
Bring temp of the grill 550 degrees F
Once the grill is up to temp place the steaks on the grill
Grill for 3 minutes and then rotate 45 degrees
After another 3 minutes flip the steaks.
Grill for another 3 minutes and then rotate 45 degrees
Place blue cheese topping on each steak and lower the grill lid.
Remove from heat after 3 minutes
