What is the best steak for salad?

When choosing a cut of beef for salad the best options are the ones that are tender but don’t have too much fat. Flank steaks are a great option for a sliced steak on top of lettuce. When sliced against the grain they are extremely tender and based on where the cut comes from on the cow, it doesn’t have any fat cap which is not the most appetizing feature if you want a protein for a salad.
