What is Sujuk?
Sujuk is a sausage that is usually made of beef or sometimes lamb. It’s often found in Turkish, Middle Eastern and parts of the Balkans. The flavor profile is typically a little spicy with seasonings including cumin, sumac, and garlic. The heat level varies depending on the amount of black pepper and chilies that has been mixed with the beef. The sausages are typical dried, but have a high fat content so they are great for grilling.
How to cook Sujuk?
- Sujuk is great on the grill. Because of the high fat content they do very well on the grill or even on a cast iron skillet. This sausage can be grilled whole, sliced, or cubed.
- First step is fire up your gas grill to 400 degrees Fahrenheit.
- Take the meat out of the sausage casing and slice into smaller pieces.
- Place it on grill grates and grill over direct heat.
- Occasionally rotate to not let the links burn.
- Because it’s a ground beef the U.S. Department of Agriculture suggests bringing the internal temp up to 160 degrees Fahrenheit.
- Once you take the sausage off the grill let it sit for 5 minutes then slice into smaller pieces.
