Why is steelhead trout good on the grill?
Steelhead is a firm texture fish that lays nicely on the grill grates. The skin helps keep the fillet together so it doesn’t fall apart on the grill. It cooks relatively fast and also has a nice fat content compared to other trout. The grill smoke combined with the rich steelhead flavor is perfect for a variety of seasonings. Combine the fatty oils of the steelhead along with some grill char and you have a great quick grilled meal.
Ingredients for Sesame Oil Steelhead Recipe
Sesame Oil – Provides a nutty flavor while keeping the steelhead moist.
Onion Powder – Adds a nice depth of flavor but does not over power the fish.
Salt – Don’t be afraid to go heavy with the salt. It enhances the overall flavors of the fish.
Garlic Powder – A little garlic goes a long way with steelhead.

Why does sesame oil work so well with grilled steelhead?
The sesame oil brings a rich nutty flavor and when combined with the toasty flavor of the sesame seeds along with the salt and smoke its a winner of recipe! When the steelhead is pulled off the grill you immediately smell the sesame oil along with a kiss of smoke on the steelhead.
How do you grill Steelhead?
Bring your gas grill up to 375 degrees Fahrenheit. Place the steelhead over direct heat low heat. Most important part of the process is make sure the grill grates are clean and the fish skin has been lightly covered with oil. When placing the fish on the grill place it with the skin side facing down.
After the fish is on the grates, place the grill cover down, but do not walk away from your grill. Don’t get distracted doing something else. This recipe calls for quick grilling time and with a thin piece of fish like steelhead fillet just a minute or two away from the grill could be the difference between a juicy delightful meal or a completely dried out piece of fish.
After 4 minutes of grilling time lift the grill and sprinkle sesame seeds over the steelhead. Close the grill grate again.
After another 4 minutes raise the cover again and check the internal temp of the steelhead. When grilling to make sure the fish has not dried out and to ensure a juicy meal, I prefer taking the fish off at 135 degrees Fahrenheit. As it sits the temp will rise a few more degrees.
Internal Temp of Steelhead
Keep in mind however, according to the U.S. Department of Agriculture fish should be brought up to at least 145 degrees Fahrenheit. internal temperature for safe consumption. If you want to heir on the side of caution then the internal steelhead temperature should be 145 degrees Fahrenheit, however take the fish off the grill around 140 degrees because the temp will rise as it sits.
Now its time to plate.
Once plated drizzle a little extra sesame oil over the steelhead. After that, serve and sit back and wait for the compliments.
Sesame Oil Steelhead Trout Recipe

- 1 piece of steelhead trout
- Sesame Oil
- Onion Powder
- Garlic Powder
- Salt
- Sesame Seeds
Instructions
Rub Sesame Oil over the steelhead trout
Sprinkle the steelhead with Onion Powder, Garlic Powder, and kosher salt.
Heat Gas grill up to 375 degrees F
Once the grill is hot place the steelhead trout skin side down and close the lid. Make sure the flame is on low.
Grill for 4 minutes and then open the lid
Sprinkle Sesame Seeds over the fish
Close the lid and grill for another 4 minutes
Remove fish and drizzle sesame seed oil over the fish.
Notes
Make sure the grill is clean before you put the steelhead on. Bring the internal temp up to at least 135 degrees Fahrenheit.
