Pork steaks, also known as pork butt, are a versatile cut of meat perfect for grilling. Grilled pork steaks have just the right amount of marbling to ensure juicy tenderness, and when paired with the exotic flavors of coconut milk and Thai curry powder, they become an unforgettable grilling recipe. Let’s dive into the process of marinating pork steaks in coconut milk and Thai curry powder, elevating your grilling game to new heights.

Why is coconut milk a good marinade?

  1. Creaminess and Moisture: Coconut milk adds a rich and creamy texture to the marinade, which helps to keep the pork moist and tender during cooking. This is especially beneficial for leaner cuts of pork, such as pork steaks or pork loin, which can easily dry out on the grill or in the oven.
  2. Flavor Infusion: Coconut milk has a subtle sweetness and a mild coconut flavor that adds depth and complexity to the marinade. When combined with other ingredients like Thai curry powder, spices, and aromatics, coconut milk helps to infuse the pork with a delicious blend of flavors.
  3. Tenderizing Properties: Coconut milk contains enzymes that can help to tenderize meat, making it more succulent and easier to chew. This is particularly useful for tougher cuts of pork, like pork butt, which benefit from a longer marinating process to break down the connective tissues and enhance tenderness.

When combined with coconut milk, the creamy sweetness of the milk balances out the spiciness of the curry powder, creating a harmonious combination.
