Lamb Marinade
Combine lamb, 1/2 teaspoon dried ginger, the juice of one lime, 1 teaspoon garlic paste, 3 tablespoons of olive oil. Let the lamb meat marinade in the refrigerator for at least three hours. Do not marinate the lamb meat for longer then 12 hours because the acidity of the lime juice will toughen the lamb meat if marinated for too long.
I prefer to make my own garlic paste out of olive oil and a pinch of salt.
Firmly press the side of the knife against the garlic, salt, and olive oil. Slide the knife back and worth until the garlic turns into a paste.
If you don’t have the time to make the garlic paste, you can certainly buy paste at the grocery store.
How to grill lamb tacos
Heat your charcoal in a kettle grill. Once the charcoal is hot place a cast iron skillet on the grill grates over direct heat. Once the skillet is hot place the marinated lamb meat in the cast iron skillet.
The lamb and soft tacos will only need a few minutes on the grill. The marinated lamb is sliced thin, so it’s a quick cook time and the tacos only need a minute on the grill. Once the lamb is browned add a pinch of kosher salt to taste.
Don’t put the tacos on the direct heat. Place them around the skillet after the lamb meat is fulling cooked. You are looking for a little char, but you don’t want to burn them. Sear Marks are good but burnt tortillas is not what your looking for.
Garnish the tacos with chopped cilantro and sliced raw yellow onion. Throw some sweety drop peppers on the taco as well.
Sweety Drop Peppers
Sweety drop peppers are a small red tear shaped peppers from Peru. They’re a mild tasting pepper that has an almost sweet flavor, but with a little bit of sour. Sweety drops are not a hot pepper.
They also add a little crunch to the tacos which is a nice compliment to the Lamb meat and soft tortillas.

Ingredients
- 1 pound sliced or shaved lamb meat
- 1 sliced white onion
- 1/2 cup chopped cilantro
- 1/2 cup sweety drop peppers
- Salt
- 8 soft taco tortillas
- For lamb marinade
- Juice of one lime
- 1/2 teaspoon dried ginger
- 1 teaspoon garlic paste
- 3 tablespoons of olive oil
Instructions
Place lamb meat in mixing bowl with ginger powder, garlic paste, lime juice, and olive oil.
Place covered in the refrigerator for 6 hours.
Heat kettle grill with charcoal.
Once charcoal is hot place cast iron skillet on grill grates over direct heat.
Once hot place marinated lamb in skillet.
Brown lamb meat.
Place tortillas directly on grill grates and heat them up.
Salt lamb meat to taste.
Take two generous tablespoons of lamb meat and place into the soft taco.
Add sliced onion, chopped cilantro, and sweety drop peppers to the taco.
Serve
Notes
Do not put the tortillas over direct heat. They will burn. Sear marks are ok but not too much char.
